The Sriracha maker whose rooster sauce outgrew its pepper supply

Transformed — Now the world's most famous Sriracha, but a pepper dispute and a split with its grower left the rooster bottle scarce and its future uncertain.

Huy Fong Foods was founded in 1980 by David Tran, a Vietnamese-born former army officer who arrived in Los Angeles in 1979 and began making pepper sauces to sell to the refugee community he belonged to. His first hit was a sriracha chili sauce, inspired by the hot sauce of Si Racha, Thailand, which Tran refined into an American-style condiment in a plastic squeeze bottle with a rooster on the label. From a tiny Chinatown operation, it grew into a cult product.

For three decades Huy Fong was a one-company phenomenon: no advertising, no fanfare, just word of mouth and a distinctive flavor. The rooster bottle became a fixture of Asian restaurants and American kitchens alike. Tran's refusal to advertise, and his insistence on a single, simple recipe, made the sauce both beloved and, in the eyes of rival manufacturers, a brand to imitate.

Then in the early 2020s the wheels came off. A long-running relationship with its pepper grower soured, Huy Fong cut ties, and a supply of the specific red jalapeños it relied on dried up. The shortage that followed - the Great Sriracha Shortage of 2023 - saw bottles vanish from shelves and prices soar, while rivals gleefully filled the gap. The rooster is still on the label, but Huy Fong's dominance is no longer taken for granted.
