David Tran was born in Vietnam in 1945 and fled to the United States in the late 1970s as a refugee after the fall of Saigon. He began making pepper sauces for the refugee community he belonged to, inspired by the hot sauce of Si Racha, Thailand, which he refined into an American-style condiment in a plastic squeeze bottle with a rooster on the label.

In 1980 he founded Huy Fong Foods, naming it after a ship that carried Vietnamese refugees to America, and began selling his Sriracha from a tiny Chinatown operation. For three decades he ran the company on a single, simple principle: no advertising, a single recipe, and a sauce that sold itself. The rooster bottle became a fixture of Asian restaurants and American kitchens alike.

Tran's insistence on a single, specific pepper and his refusal to advertise made Huy Fong both beloved and, to rivals, a brand to imitate. Though a 2020s pepper-supply dispute and shortage shook the company, the Sriracha he created remains one of the most recognisable condiments in the world — and Tran one of the most admired self-made entrepreneurs in the food business.
